Shake the coconut on a dry pan until it takes color. Pour over a large plate to cool off.

Heat the oil in a wok and rose in it. Add garlic, curry and sambal oelek. Stir thoroughly. Peel the bananas and cut into 4 cm pieces. Bring them to the wok and stir thoroughly. Add coconut milk, salt and sugar, stir gently and simmer for 5 minutes.
