Cut the tomatoes in quarters and scrape the kernels. Cut the tomato boats into smaller pieces. Put them in a saucepan, pour water, boil, turn down and simmer the tomatoes into a thick puree. Season with salt, pepper and sugar. Blend the tomatoes with the vinegar or simply stir the wine vinegar if you prefer a vinegar with a structure. Adjust if necessary. Consistency with water. The tomato dish holds a minimum of 8 days in the refrigerator.
