2.5dlWhipped cream
4Pasteurized egg yolks

Instructions for Créme brulée 05

To prepare the Créme brulée 05 recipe, please follow these instructions:

Stir egg yolks, sugar and vanilla kernel together. Then stir the cream and milk into the egg mixture. Filter the mixture and spread it into 4 ovenproof dishes (about 2 dl). Place the dishes on a baking sheet and behind them in the middle of the oven - until the cream has settled. Put Creme Bruleérne in the fridge for at least 3 hours - without covering them.

When serving: Sprinkle the ice-cold Cream Bruleé with sugar and burn them with a gas burner to the sugar, melt and color. Server immediately.

Tip: The cream must not start bubbling / boiling when baked - it must have a "smooth" surface and tremble slightly when it is finished.

Instead of a gas burner, you can set the dishes with Creme Bruleé in an ice-cold water bath - like ice cubes. Sprinkle with sugar and grill them at the top of the oven until the sugar is just melted and golden - keep an eye on it, because suddenly it's going to go well. Take them out and serve immediately.
