To prepare the Potage Parmentier recipe, please follow these instructions:

The potatoes are peeled, cut first in a quarter lengthwise, then thinly sliced. Let them pull in cold water until they are used. Clean the pores, cut the root and the green part away. The white part is cut longitudinally and then cut into thin strips.
