The oil is heated in a thickened pan. Onions, peppers and chilli are added. Let it simmer for low heat for 5 minutes, stirring occasionally. Corn kernels, mushrooms and salmon are added and simmer for another 5 minutes. Season with salt and pepper, decorate with coriander.
