Ingredients for African peanut stew

(depends on how strong you are eating your food!)
Coarsely chopped peanuts to sprinkle
Oil for frying
1Carrot in cubes
1tbspHoney
1cloveGarlic minced
1Medium size sweet potato peeled and diced
1/2tbspGinger minced
1/2Medium onion, diced
1/2tspCumin seeds
1/4tspSalt
1/4-1/2tspCayenne pepper
2tbspPeanutbutter
3dlVegetable broth
3cupSpinach coarsely chopped (it can be purchased frozen in balls can easily be used)

Instructions for African peanut stew

To prepare the African peanut stew recipe, please follow these instructions:

Heat oil over medium heat in a pan.
Add onion and sautate for 3-4 minutes or until the onions are shiny.
Stir garlic and ginger in, keep boiling for a few more minutes.

Stir salt, cayenne pepper and cumin in.
Start with a little cayenne pepper and add more if you want the dish more strong.
Cook for 1-2 minutes more until the spices are fragrant.
Add sweet potatoes, carrots, broth and honey.
Bring the mixture to boil and turn it down so it just stands and bubbles.
Stir in peanut butter and simmer for 15-20 minutes.

When the sweet potatoes are soft, spinach is stirred, and the whole simmer until the spinach has collapsed and warmed well.
Served if required. With brown rice, and topped with roasted peanuts.



tips:
TIP: Sweet potatoes can be a little expensive to buy, and only one should be used for this dish. But they can easily tolerate being peeled, cut into the tern and boiled for a few minutes and then frozen for later use. Bon appetite! :-)
