Use a good chocolate to this sauce. Heat the sugar and water to the sugar is melted. Bring to the boil and remove the Pan from the heat. Break the chocolate into small pieces and stir them in sugar sheet until it is completely melted. Whisk the vanilla and butter in the sauce and serve it hot or cold.
