Grapeseed Oil for frying
1/2dlFish stock
1/2dlDry white wine
10dropsWhite wine vinegar
2Lemons
3Small bundles fresh herbs (Dill, chervil, parsley)
3/4kgFresh spinach
4Egg yolks
800gSalmon fillet with skin

Instructions for Fried salmon with Hollandaice

To prepare the Fried salmon with Hollandaice recipe, please follow these instructions:

Chop the spices well and mix them up in the sauce immediately before serving.

Pick the spinach and rinse carefully. Stir it in a spacious saucepan with a little butter.

Stir the salmon in a little oil on the skinside with even heat. When the heat reaches the surface, the salmon changes color and the skin is beautifully crisp.
