Freshly ground black pepper
Salt
1Green pepper, cleaned and cut into squares
1Yellow pepper, cleaned and cut into squares
1Red pepper, cleaned and cut into squares
100gBlack olives, pitted and coarsely chopped
2Egg yolks
3tbspOlive oil
6Eggs
75gReal cheese in slices

To prepare the Pepper and olive omelette recipe, please follow these instructions:

Heat the oil in a deep pan. Add the pears and sauté them gently for approx. 5 minutes. Add the olives and let it spin for a good 2 minutes. Whip the egg whites and add salt and pepper to your liking. Pour them on a pan and allow the mass to stand on medium heat until it is almost stiff. Arrange the cheese slices on top of the egg yolks and put it under a hot grill until the cheese starts to melt and turn golden. Put it on a dish carved in triangles and serve with fresh salad and bread.
