Instructions for Andesteg long-term step

To prepare the Andesteg long-term step recipe, please follow these instructions:

Turn on the oven at 100-125 degrees C. alm. oven. Preparation for another takes approx. 1½ hours, but let another be done approx. 1 hour before eating, so that it can rest for half an hour, cut and again put in the oven for half an hour while accessories are being arranged.

The other is cleaned, the food is removed and the other is thoroughly wiped. The wing tips are cut off. There is a hole in the skin on both sides, so the grease can run away. The other is spiced inside and out with salt and pepper. It is filled with apple boats and prunes and sews or seals with meatballs.

The other is laid with the back up on the grid over the frying pan and fry approx. 2 hours depending on the size of the other, 4 dl poured. Broth in the frying pan so the bottom is just covered before the fry is started. The second is dripping along the way.

Meanwhile, onions, carrots, indigo and wing tips are boiled for approx. 4 dl. broth. Let it be small 1½ hours.

The other turns with the chest upwards and fry about 4 hours depending on the size of the other. Dropping on the way.

Kogelage and cloud from another are poured into a saucepan. The cloud is added a little cream. It is then leveled to sauce and tasted.

The spirit is about to rest approx. ½ hour in a switched oven, possibly. With the oven door on the clamp. Then cut the second and put it again in the oven approx. ½ hour at 100 degrees C. alm. oven.

The accessories are arranged while others rest after it is cut.

tips:
Calculation of peak time at a larger / smaller and: 360 min / 3000 gr. = 0.12 min. per. Gram 0.12 min. * 3000 gr. = 360 min. Total 360 min / 6 = 60 min. per. ½ kg. 60 min * 2 = 120 min. = 2 hours with the back upwards. 60 min. * 4 = 240 min. = 4 hours with chest upwards.
