Instructions for Archipelago herring

To prepare the Archipelago herring recipe, please follow these instructions:

2 sausage, cleaned and filleted herring. The skin is removed and the herrings put in milk water overnight. A marinade is prepared by 3/4 dl. tomato paste, 3-4spsk. sugar, 1 1/2 dl tarragon vinegar, a little water, 4 whole cloves and 4-5 white peppercorns, 1 finely chopped pickled cucumber, 1 crushed bay leaf and a fine cut onion. Marinade stir well together and stand to the next day. The fillets are taken up and cut into strips placed in the marinade and allowed to pull in a few hours. Served in Bowl garnished with onion rings.
