2tbspLemon juice. freshly squeezed
2tbspOlive oil
250gFresh white asparagus
500gPotatoes new

To prepare the Asparagus and potato salad with lemon vinaigrette (White asparagus) recipe, please follow these instructions:

The potatoes are peeled and cut into 2 cm pieces. The asparagus is peeled from head to root, the bottom piece is broken off. The asparagus is then cut into pieces of approx. 5 cm.

Put potatoes and so much water that they are covered, in a pan over high heat, and bring them to a boil. Turn down the flare, lay on and simmer for 15 minutes or until they are almost tender. Add asparagus, boil it all for another 2 minutes or until the vegetables are tender. Pour the water off.

Mix olive oil, lemon juice, grated lemon peel, squeezed garlic and salt in a large bowl. Add potatoes and asparagus and mix well.

Serve hot or put in the fridge for later serving.
