Ingredients for Asparagus with green sauce

Dill sprigs
Freshly ground pepper
1tspCoarse salt
1dlWhipped cream
1dlSmall dill sprigs
1lWater
1 1/2dlSour cream 38%
2Egg yolks (size large)
400gFrozen, thawed shrimp in shell
50gTrout ROE
500gFresh, green asparagus

Instructions for Asparagus with green sauce

To prepare the Asparagus with green sauce recipe, please follow these instructions:

Arrow the whole shrimp. Bring the asparagus in boiling water with salt and cook them 2-3 min., After thickness. Let them drip into a door layer.

Green sauce: Blend whipped cream and dill for approx. 20 sec. Bring cremefraiche into a small saucepan and heat it to the boiling point. Stir the egg yolks together in a bowl. Sprinkle some of the hot cream fry into the egg yolks and then pour it back into the pan while still whipping. Heat the sauce up without boiling. Add the "green" cream and warm the sauce through. Season with salt and pepper.

Serving: Recipe asparagus, shrimp and trout in groups on serving plates. Serve the sauce in a bowl next door.
