100gCracked rye kernels
200gWheat flour
200gRye flour

Instructions for Backstroke 03

To prepare the Backstroke 03 recipe, please follow these instructions:

DAY 1
Water, salt, yeast, honey and buttermilk are stirred together. Rye flour and cracked rye kernels are stirred in. Cover the bowl with a film or a plastic bag and make it as cold as possible overnight. Alternatively, let the dough rest for a few hours on the kitchen table.

DAY 2
The next day stir the wheat flour and the cracked carrot. The dough is so soft that it flatters out when it is poured onto a crispy table. Must be about 15x30 cm. Cut 15 loaves of bread baked with baking paper. The loaves raised for a few hours and then brushed with butter.
Bake at 210 degrees for 15 minutes
