For egg yolks, I usually use pasteurized, but it is not necessary when the eggs in the process are heated to above 75 degrees.

Came the cream, milk, approx. 1/4 of sugar, salt in a saucepan and slowly warm it up. Meanwhile, peel the bananas and cut them into small pieces. The bananas are placed in the casserole and boiled for about 10 minutes. Simply simmer, not boiling.

While the bananas boil (it smells a bit odd), the egg yolks are whipped together with the rest of the sugar in a bowl.

When the bananas have boiled for 10 minutes, they must be squeezed through a sieve, if you are lazy, you only use a blender, but then you get a little different consistency in the ice.

Slowly pour them into the egg pulp while whipping so that the eggs do not coagulate. When things are mixed, pour it all into the saucepan again, and the cream (as it is called now) warms slowly until it starts to get a bit thicker. Stir around all the time, and make sure it does not get too hot. When you can pull a finger over the back of the pot, and see where it has been pulled, the mass is ready. Take it off the heat and allow it to cool slightly before placing it in the refrigerator. Stir for about 10 minutes so that milk skin is not formed.

When the cream is cooled down, pour it into the ice maker and run until it is finished. If you do not have an ice machine, put ice in the freezer and stir approx. Every 10 minutes.
