Ingredients for Brindil Bhaji

Cilantro sprigs
0.5tspSalt
0.5tspGround turmeric
1tspGaram masala
1Onions cut into thin slices
1Dried red chili
2cloveThe cut garlic
2tbspVegetable ghee
2.5cmGrated ginger root
400gTomatoes from the Tin
500gEggplant cut into slices

Instructions for Brindil Bhaji

To prepare the Brindil Bhaji recipe, please follow these instructions:

Cut the Eggplant slices into finger-thick strips.

Heat the ghee in a pan. Add the onion and let it cook over direct heat stirring constantly in 7-8 minutes, or until very soft.

Garlic and eggplant strips came in and turn up the heat and let it cook for 2 minutes.

Stir in the ginger, turmeric, chili and salt in, as well as the tomatoes with the juice from the can. MAS tomatoes with back of a wooden spoon. Simmer without lid in 15-20 minutes into the eggplants are very soft.

Stir in garam masala in. Simmer for additional 4-5 minutes.

Brindil bhaji came over on a preheated serving dish, garnish with fresh cilantro sprigs and serve immediately.
