Ingredients for Brocolisuppe

Grated Parmesan cheese
150gConcentrated tomato puree
4slicesLean bacon
6tbspOlive oil

Instructions for Brocolisuppe

To prepare the Brocolisuppe recipe, please follow these instructions:

Rinse broccolien carefully. Share it in small bouquets and boxes the tough stems. Chop the garlic, parsley and bacon.

Pour olive oil in a pan, add the broccoli, garlic, parsley and bacon, and fry it, stirring for 1 to 2 minutes. Pour the tomato puree and 5 cups water. Stir well, put a lid on the Pan, and let Cook for 5 minutes.

Then pour the rest of the water in and let the soup boil for half an hour at medium heat. Com salt and pepper, and let it all simmer for a few minutes. Just before serving the soup be smoothed over with an electric blender.

Can be served warm with a sprinkle of parmesan over.

We prefer the soup cold, grate or be replaced by a spoonful of crème fraîche.
