100gFrozen peas
3tbspLemon juice
4Small squash in strips
4X 225 g Skate wings
50gMinced anchovies

To prepare the Budge with courgettes recipe, please follow these instructions:

Before a baking dish with foil that is clear with oil. Put the fish and drizzle with lemon juice and pepper to taste. Cover with foil and cook the fish in the oven at 200 degrees about 20 minutes. Put them on a serving dish and keep warm. Save fish brine. Heat the oil and add the onion. Add the courgettes/squash and peas and sauté them with in 5 minutes. Mix the anchovies, capers, salt and pepper in brine as well as fish and warm it gently through. Scoop it over the fish and garnish with lemon both.
