2tbspFruit chutney
2Medium-sized carrots
2Medium-sized chopped onion

200gShii-take mushrooms
300gCauliflower cut into small florets
dlVegetable broth
45gCrushed almonds
¼tspBumped cloves
½tspChili powder
1tspBrown mustard seeds
1Medium green bell pepper cut into squares à 2 cm
1Medium potato
1Medium sized parsnips
1tspGround turmeric

Instructions for Cute grøntsagskarry with Shii-take

To prepare the Cute grøntsagskarry with Shii-take recipe, please follow these instructions:

Cut the carrots, Parsnip and potato into pieces à 2 cm.

Heat the oil up in a large thick-bottomed pan; put onions in and fry them at medium heat in 4 minutes, or until they are soft. Add the cardamom, cloves, cumin, coriander, turmeric, mustard seed, chili powder, and ginger and cook it, stirring in 1 min, or it starts to smell.

Mix carrots, parsnips, potatoes, broth, juice and apricot chutney. Put a lid on and cook it at medium heat for 25 min; stir in it every now and then.

Stir in green pepper, shii-take mushrooms and cauliflower in. Simmer for 10 minutes, or to the vegetables are tender. Stir in the crushed almonds in and serve with rice.
