Ingredients for Duck breast

Pepper
Salt
0.5dlFund (calf or poultry)
0.5Red chillies (finely chopped)
1Duck breast of about 300 grams
1Courgette
1tbspOil
1dlWhipped cream
2tbspBalsamic vinegar
2Uncooked baking potatoes
2Small bunches of green grapes without stones
2tbspSugar

Instructions for Duck breast

To prepare the Duck breast recipe, please follow these instructions:

Set the oven to 125 degrees. Scratch the duck breast on the skinside. Season with salt and pepper and put the meat on a dry forehead side down for 3 minutes. Turn it over and flush it 2 minutes on the meat side. Stir the meat in the oven for approx. 25 - 30 minutes. Remove the meat from the oven. Grab it in stanniol and let it rest approx. 10 minutes.

Melt sugar over low heat in a small thick-frying pan. Do not touch it. When the sugar is completely melted and golden, the saucepan is taken from the heat and the vinegar is stirred in. But beware, it sprouts and the sugar stiffens.

Beat the grapes with a needle and boil it for a couple of minutes in lets salted water. Let them drip off. Cut the cooked potatoes into thin slices and shake the golden in the oil. Cut the peeled zucchini into long thin strips and give it a boil in leachate water.

Server the duck cut into slanted slices with the accessories.
