Ingredients for Fried salmon with chilli sauce

EVS. 1/2-1 cup water
1kgFresh salmon
1tspCoarse salt
1/2cupFresh coriander leaves
1/2lGood frying oil (Grapeseed)
10medium-sizedRed chili
2-3tbspSugar
3tbspFish sauce
3-4cloveGarlic
3-4tbspOil (use the fish is fried in)
4tbspWine vinegar

Instructions for Fried salmon with chilli sauce

To prepare the Fried salmon with chilli sauce recipe, please follow these instructions:

Preparation: Cut three scratches (about 1 cm.) Across both sides of the fish. Then cut it into two pieces. Gnub salted down in the scratches and on the fish itself. Crush chilli and garlic into a mortar until it's all mixed to a rough amount. Chop the coriander leaves roughly.

Heat the wok with oil and put the salmon pieces in. Screw slightly down the heat and raise the salmon approx. 30 min. (Turn the pieces several times so they do not get too dark). Remove the salmon pieces from the oil, let them drip and then place them on an elongated dish. Pour the oil of the wok and let it settle down in a bowl. Wash the wok in clean water and wipe it off. Heat it again with 3-4 tbsp. Of the oil you just fried the salmon. When the oil starts to smoke add the mixture of chilli and garlic.

Add wine vinegar. Add fish sauce and sugar. Adjust the thickness of the sauce with cold water. The consistency should ideally be like buttermilk.

The wok is taken off the heat and the sauce poured over the fish. Sprinkle the coarse chopsticks over the dish just before serving.
