Freshly ground black pepper

1Red bell pepper, cut into thin strips
1Zucchini cut into strips
1.5tspLemon juice
1.5tspFinely chopped fresh thyme or 0.5 TSP. dried
1.5tbspOlive oil
100gMushrooms sliced
2cloveGarlic finely chopped
2tbspGrated Parmesan cheese
3Spring onions coarsely chopped
4Eggs
4tbspMilk
60gShredded mozzarella

Instructions for Frittata with mozzarella cheese

To prepare the Frittata with mozzarella cheese recipe, please follow these instructions:

Whisk eggs, ¼ TSP. salt, black pepper, a little milk and ½ tbsp. olive oil together with a fork and place the mixture to one side.

Saute the mushrooms, garlic, thyme, scallions and more pepper for 3 minutes in a frying pan in the rest of the oil. Add the zucchini, bell peppers, the rest of the salt and lemon juice, and FRY for 3-4 minutes.

Remove the Pan from the heat, add the Parmesan cheese. Pour egg mixture over, put the pan back on the heat and cook 1 minute. Sprinkle mozzarella cheese over. When cheese is melted, frittataen is finished.

Serve immediately.
