Mango marinade
0.25dlWhite wine vinegar
0.5dlBoiling water
1Onion (finely cut)

10pcsAllspice (crushed not powder)

200gMangoes (diced)
300gMango Puree
6Lime (grated zest and juice)
6tbspOnion (finely chopped)
8Fresh herring (gutted and filleted)

Marinating Mix sugar, water, vinegar, pepper and onion to a pickle herring fillets and put to rest for at least 48 hours. (You can of course choose to use finished pickled herring).
