Finely shredded cabbage and/or Savoy cabbage
Some tbsp buttermilk
Add a little water if necessary
1tbspSalt per kg of cabbage

To prepare the Homemade Sauerkraut/Sauerkraut, Donnerwetter (Old Fashioned) recipe, please follow these instructions:

Finely shredded cabbage and/or Savoy cabbage mixed with 1 tablespoon of salt per kg of cabbage, packed in jar and stand, to the cabbage juice form.

Made under pressure and put for fermentation at room temperature a few weeks; the fermentation process to be speeded up with a few tablespoons of buttermilk.

Then kept cool, covered with a lid. Cabbage must always be covered by the liquid (add a little water if necessary).

By server no rinse cabbage with cold water before it is served.

Eaten especially for pøser dishes.
