100gBacon strips, diced
2tbspRed wine vinegar
3Chopped shallots
750gPotatoes, peeled and cut into 2 cm pieces

Instructions for Hot potato salad with bacon II

To prepare the Hot potato salad with bacon II recipe, please follow these instructions:

Put the potatoes and so much water that they are covered, in a pot of hot heat, and bring them to a boil. Turn down the flask, put on the lid and simmer for 15 minutes or until it's tender. Pour the water off.

Shake while bacon strips on a pan until crispy, 5-10 minutes, with regular stirring. Take them up with a casing and drain them on greasy paper.

Remove all grease from the pan except 2 tablespoons. Add the mustard onion and flour, stir for 1-2 minutes or until the mixture thickens, with frequent stirring.

Add vinegar, potatoes, bacon, salt and pepper. Warm it all through. Add chopped parsley. Immediately pour the salad onto a dish lined with lettuce leaves.
