Instructions for Lamb Chicken as in Brittany

To prepare the Lamb Chicken as in Brittany recipe, please follow these instructions:

Bowl of red wine, esdragon, salt, pepper and paprika in a bowl of onions, cut into rings and finely chopped garlic. Place the meat in the marinade and leave it covered overnight.

Next day clean the rest of the vegetables and cut well. Cut the smoked bacon into cubes that are shaken in a large pan, a refractory dish or frying pan. Brown the club on all sides. Get the vegetables on and half of the marinade. Cover the dish and cook the oven in the oven at 200 C for 1½ hours.
When the club is finished, take it out and keep it warm.

Cook the pan with the rest of the marinade. Put the roast chicken in a saucepan and smooth it with a buttercup. Remove the pot from the heat and stir the cognac. Taste the sauce with salt, pepper and peppers. Peel the parsley well and sprinkle it in the sauce for serving.
