250gSugar
5dlWhipped cream
5dlWhole milk
5-6stemsLemon grass
8Pasteurized egg yolks

Instructions for Lemongrass ice cream

To prepare the Lemongrass ice cream recipe, please follow these instructions:

Whip the egg yolks with the sugar until they are light and foaming.
Boil milk and cream with the finely chopped lemongrass stalks.
Turn off the pan and allow the mixture to stand for about 30-45 minutes.
Remove the stems and bring the milk to a boil again.
Slowly pour the boiling milk cream into the egg while whipping.
Bring it all back to the pot and lay the mass with constant stirring until it reaches approx. 85 degrees, it must not boil.
Cool the ice-cream in the refrigerator and freeze it in an ice machine.


tips:
To prevent milk and cream from burning, make it possible in a hot water bath. After physiotherapy, whip the mass cold so you do not have to leave it for a long time and cool and keep it airy. Think it's possible to throw it directly into the freezer and save the ice cream if you whip it cold.
