Ingredients for Lime cake

1tbspFinely grated lime
1Lime shell in thin strips
1dlLime juice
1Vanilla pod
2Egg yolks
2Egg whites
2dlPlain yogurt
2.5dlWhipped cream
300gCream cheese 70 + (37%)
6Gelatin leaves
75gPotato flour

Instructions for Lime cake

To prepare the Lime cake recipe, please follow these instructions:

Pie bottoms: mix the potato flour and baking soda. Beat the whites until stiff. Add the sugar and beat for about 3 min. turn the kartoffelmels mixture into the whites along with the egg yolks. Got half the dough in a greased springform (ca. 22 cm in diameter). Behind the bottom in the middle of the oven. Let cool on a wire rack batter and behind the second bottom.

Fill: Stir cream cheese soft with egg yolks and yoghourt. Add the vanilla, sugar, lime zest and juice. Put the isinglass soaked in cold water for approx. 5 min. Pull husblasen out of the water with the water that hangs by. Melt it in a dish in a water bath. Cool husblasen with a bit of cheese mixture and got it back in the rest under stirring. Whip the whites first and then the cream stiff.

Turn the whites and whipped cream into cheese mixture. Place the ring into a springform (ca. 22 cm in diameter) on a platter. Style a high "collar" of wax paper inside the ring. Put in the ring a cake bottom, half of fromagen, a cake bottom and the rest of the fromagen. Style cake covered in the fridge for the next day.

Glue the strips: getting lime strips in boiling water with added sugar. Cook them on low heat and under the lid for approx. 5 min. Let them drain in a sieve.

By server: Garnish the cake with lime strips.
