Instructions for Mücver (Turkish squash pancakes)

To prepare the Mücver (Turkish squash pancakes) recipe, please follow these instructions:

The squash is torn fine, put into a bowl with 2 tsp salt. Leave for half an hour, pour the pulp into a sieve and squeeze the juice with your hand.

Herbs are chopped well in the food processor. Squash, egg, flour, pepper, peppers are added and mixed in the food processor.

Rich oil is heated on a large skillet. Squash the spoonful into the hot oil, press lightly flat and bake for 2 minutes on each side. (They must be light brown). The small cakes are put to drain on the kitchen roll before serving on a dish.

In Turkey, Mücver is often served with a sauce of salad yoghurt stirred with a squeezed garlic sauce and salt to taste and put on the table in a bowl. Everyone is pouring a little spoonful of sauce over its Mücver on the plate.
