Instructions for Minestrone soup

To prepare the Minestrone soup recipe, please follow these instructions:

First, clean all vegetables. Onions, carrots and pears are cut into small cubes and placed in a bowl. Cauliflower cut into small bouquets, pepper fruit cut into tern, celery in fine slices (½ cm thick). The three parts are put in another bowl.

Pour the oil into a large saucepan when the oil is hot, the bacon is shaken brittle. Take them up before they are dark brown and save them for later. The bacon grease is used to sweeten the vegetables.

Onions, celery, carrots and pears are exchanged for a few minutes before chopped tomatoes and chicken broth are stirred in the pan. Add thyme, parsley, bay leaves, salt and pepper and allow the soup to boil for 10 minutes.

Remove parsley and bay leaves and add rinsed kidnet beans, pepper fruit in tern and small cauliflower bouquets.
Continue cooking for approx. 8 minutes. Taste the soup, sprinkle with the bacon pieces and serve it with bread and grated cheese.
