200gRibs-fresh or thawed and drained

Instructions for Muffins with currants Diabetes

To prepare the Muffins with currants Diabetes recipe, please follow these instructions:

Turn on the oven at 200 degrees c. alm. oven.

Beat the sugar and eggs light and frothy.
Add the fat and the milk and stir well.
Sift flour, baking powder, cardamom and søddemidel together and stir the mixture into the dough and beat until there are no lumps.
Turn the currants in flour and mix them into the dough.
Divide the batter into 12 muffin cups and bake them in the middle of the oven 20-25 my.
Take the baked muffins out of the oven and let them cool on a rack.
Mix water and powdered sugar and stir. Advantage of the glaze on the 12 muffins.

Tips:
The small amount of sugar is ok for a diabetic.

You can use black currants instead of ribs and make the glaze by 3 tablespoons powdered sugar, ½ teaspoon water and ½ teaspoon romessens. The finished muffins can be frozen.
