1.5dlWhipped cream
10dlVegetable stock
200gPotatoes, peeled
200gPeeled parsnips
6stemsFlat-leaf parsley

Instructions for Parsnip soup

To prepare the Parsnip soup recipe, please follow these instructions:

Peel the parsnips and potatoes and cut them into cubes. Cook the vegetables in the broth for about 15 mins.

Pour the soup into a bowl and blend it, possibly. with a hand blender. Pour the soup back into the pot and season with mustard, salt and pepper.

Add the cream and cook the soup for about 2 min.

Sprinkle with chopped parsley and serve piping hot.
