1Lemon
1tbspFinely chopped Candied Ginger
1tspBrine from pickled ginger
1.5dlWhipped cream
10gDried ginger
400gPeeled pears
7dlWater
75gCrushed daim bar ell. DAIM balls

To prepare the Pears with Daim sprinkle ... recipe, please follow these instructions:

Boil brine
Cut the peel of the lemon with fx. a potato peeler. Bring water, sugar, ginger and lemon zest to a boil. boil the brine at low heat and under the lid for approx. 5 min. Halve the pears and remove stem, flower and cored. Cook the pears in the lagen in about 5 mins.
Style them to cool-still in the bed sheet.

Cream
Whip cream and Daim for a light foam and season with ginger and pickle. Advantage the cream on 4 serving plates. Take the bulbs out of the brine, Pat dry and cut them into thin slats, as a fan. Serve the pears on cream and garnish with Daim.
