1.25kgWhite sugar

20mlLemon juice
30mlSlaked lime fruit per 5 litres of water

Instructions for Pickled Green Figs

To prepare the Pickled Green Figs recipe, please follow these instructions:

Weigh figenerne and calculate the amount of syrup. Scratch figenerne with a knife and make a cross in each where the flower has been sitting. Make a slaked lime fruit solution and put the figs to soak overnight. Rinse figenerne thoroughly in fresh water and let them soak for about 15 minutes in the Sun.

Syrup: Bring water to a boil and pour it over the sugar in a large saucepan. Add lemon juice and, if desired. crushed ginger root and bring mixture to a boil while stirring.

In the meantime, boil in water approximately 15 min figenerne cover, or until they are barely tender. They are ready when a stick can penetrate easily through the skin.

The pot is taken by the heat and figenerne is taken up with a slotted spoon and add the boiling syrup.

Boil without the lid for pears are very tender and the syrup is thick.

Island pears and syrup into hot dry and sterilized glass and close immediately.
