1dlWhipped cream
1-2Shallots

To prepare the Roasted Trout Fillet with acid sauce recipe, please follow these instructions:

Ask the fishmonger to scrape skællerne of trout skin. Share Trout Fillet into two or four pieces and season them with salt and pepper. Sauté the finely chopped shallot in a saucepan with the butter and high-gloss add the acid leaves.

Boil whipping cream and broth and pour over the juices. Let the sauce simmer until it gets a proper consistency (approx. 5 min.) and season with salt and pepper.

Put trout pieces with the skin side down in a hot pan with oil. Put a loose piece of aluminum foil over the fish, turn the heat down a little and let it roast, to the skin is crisp and fish is just barely through warm – ca. 5 min. – depending on fish thickness. Server with acid sauce, new potatoes and vegetables.
