To prepare the Smoked Halibut Rosettes recipe, please follow these instructions:

Creme fraichen is seasoned with dried coriander, a finely chopped leaf of fresh coriander, lemon peel, salt and pepper. Pour the dressing on a plate and put a rosette of smoked halibut on top.

Pour the liquid from the caviar and place a tablespoon in the center of the rosette. Decorate with Christmas salad, sherry tomatoes and twigs of fresh coriander.
