Heat the oil in a frying pan. Sauté onion and garlic until they are crisp and lightly golden. Add the bell pepper and sauté for 5 minutes.

Add the sausage and cayenne pepper and saute the 5-6 minutes. Add the tomato dice and sauté 1 minute.
