100gDried chickpeas soaked overnight
2tspConcentrated tomato puree
2dlOnions, diced
2tbspButter or margarine
2.5dlVegetable stock
2.5dlYellow squash, diced
4dlCarrots, diced
7dlGreen squash, diced

Instructions for Squash in red, yellow and green

To prepare the Squash in red, yellow and green recipe, please follow these instructions:

Boil the soaked chickpeas in new water for approx. 1 hour and pour the water away.

Sauté the onion in a pan with the hot oil/butter mixture. Add the tomato puree, spices, broth and vegetables. Let it simmer for about 15 minutes, or until tender. Add the chickpeas and warm right through.

Serve over cooked rice.
