Instructions for Stir fried noodles with peanuts (Phat Thai)

To prepare the Stir fried noodles with peanuts (Phat Thai) recipe, please follow these instructions:

Put the noodles soak in lukewarm water for about 20 minutes (If you need them right away they can be softened in boiling water), let them drain well in a sieve. Crush the garlic and chop them finely. Hug the roasted peanuts coarsely in a mortar. Whip the egg together. Cut the limes in small boats.

Heat the oil up to the smoking point in a wok. Add the chopped garlic. Add the noodles and keep them in motion with a metal spatula. Then add the dried shrimp, fish sauce, sweet soy sauce, sugar, beaten eggs and peanuts. Remember to keep the Court in motion all the time, so it does not burn on. When the Court has done in ca. 5 min. is taken by the heat and vårløg and bean sprouts are added and mixed in. Served with lime, squeezed for juice, both out of court and crushed, dried chili (Prik phon)
