Ingredients for Strong prawn soup

1lVegetable stock
10-12Mushrooms into thin slices
1-2tbspRoughly chopped galanga
1-2tbspKorianderrod roughly chopped
2stemsLemon grass groftsnittet
2Fresh red chili coarsely chopped
2tspGarlic roughly chopped
2tspSugar
3tbspFish sauce
3-4Fresh green chili coarsely chopped
4Kaffir lime leaves whole
4tbspLime or lemon juice
5-6tbspOil for frying
8-10Black peppercorns bumped
8-10Large tiger shrimp in shell (frozen)

Instructions for Strong prawn soup

To prepare the Strong prawn soup recipe, please follow these instructions:

The shrimp is thrown, pilled and halved. The black strings are removed.

The shrimps are roasted in oil in a pot of garlic, pepper, lemon leaves, galanga, lemongrass, coriander and chilli. The mixture must rise sharply, without burning, to make full use of the spices. You can add some water occasionally during the frying. Stay on until it blends strongly, it may cause tears in the eyes and smell bitter.

The broth is poured and the soup boils approx. 30 minutes after which it is said. You can add more broth or water if the soup is boiled a lot. Season with lemon or lemon juice, sugar and fish sauce.

The halved shrimp and mushroom slices are blanched separately for the soup to remain as clear as possible. Then they are served with fresh coriander leaves in the soup bowl. The soup poured scaldness just before serving.

tips:
The soup can be easily cooked in advance and heated when served. It only gets better - and stronger.
