Ingredients for The peach-limeis

Half of peaches from a can at ca. 850 g
Honey Almonds
Lime zest, finely grated
½lButtermilk
½dlWater
1/4lWhipped cream
100gAlmonds, peeled and broken
dlAcacia honey
150gIcing
2tspVanilla sugar
25gButter
3tspLime juice, freshly squeezed

Instructions for The peach-limeis

To prepare the The peach-limeis recipe, please follow these instructions:

Peach-limeis:
Pour the peaches to drain in a sieve. Bring them to a food processor / quick baker with lime juice, chicory and vanilla sugar. Cut at fastest speed for approx. 10 sec. Bring the peach mixture into a bowl and add a glue dish. Whip the cream stiff. Gently turn the buttermilk and whipped cream into the peach mixture. Pour the mixture into a metal mold (about 2 liters) and cover it with aluminum foil. Freeze ice cream for approx. 24 hours. Stir 3-4 times during freezing. Place the ice in the refrigerator approx. 1 hour before serving.

Honey Almonds:
Melt the butter in a pan. Add the almonds and shake them with even heat and stirring for approx. 5 min. Until the almonds are golden. Take the forehead from the heat. Add the honey and water and stir in the mixture until the honey is melted.

At the serving: Put the peach-limeis in pearls spheres together with the warm honey almonds.

tips:
The ice can be shaped into balls in good time, for example the day before. Place ice in the refrigerator for approx. 1 hour. For example, shape it into balls and put them on a flat dish. Set the ice-cream balls covered in the freezer.
