Lemon balm
Sugar to taste
100gPast. whole egg
1000gFresh raspberries
4tbspGrand Marnier
500gWhite chocolate
70gPast. egg yolks
8dlWhipped cream

Instructions for White chocolate mousse with Raspberry Puree

To prepare the White chocolate mousse with Raspberry Puree recipe, please follow these instructions:

Melt chocolate over hot water bath.
Beat the whole egg and egg yolk together and flip it into the chocolate.
Add The Grand Marnier.
Whip the cream stiff.
Turn a little of the cream skimmed in the chocolate before the rest turned into.
Pour the mousse into a bowl and set the cold for a few hours.
Purér hind wearers, (save a few nice for decoration).
Season to taste with sugar.
Mousse served in slices with Raspberry Puree.

Tips:
Garnish, if desired. with fresh raspberries and lemon balm.
