Instructions for Wild boar in sour sauce

To prepare the Wild boar in sour sauce recipe, please follow these instructions:

Prepare marinade by boiling the vinegar and red wine with laurel leaf, thyme, chilli powder, spice cloves, 1 chopped onion, carrot and leaf celery. Pour marinade into a large pot and let it cool completely. Add the wild boar fillet and marinate it for 48 hours.

Chop the second onion and brown in the butter, then add cocoa, sugar, prunes, grated orange peel, raisins and pine nuts. Boil for a couple of minutes after which the wild boil meat is added. Boil on low heat for 1 hour.

Add the salted marinade with salt and cook further until the meat is very tender and the sauce is leveled. Server with cornbread, potatoes or potato gnocchi.
