Ingredients for Yellow røds cake

Finely grated lemon zest
Chopped Walnut kernels
1.5dlRaisins
2tspBaking soda
2tspFreshly squeezed lemon juice
2tspGround cinnamon
2tbspWater
200gSoft butter
200gBrown sugar (approx. 3 1/3 dl)
200gCream cheese naturel 37% (70 +)
200gWheat flour (about 3 1/3 dl)
3Eggs (size medium)
5Finely grated carrots (approx. 300 g)
50gIcing (approx. 1 dl)

Instructions for Yellow røds cake

To prepare the Yellow røds cake recipe, please follow these instructions:

Baking time: about 1 hour at 175 °.

Beat the butter, brown sugar and eggs together well. Mix flour, cinnamon and baking soda together and turn it into butter mixture alternately with carrots, raisins and Walnut kernels. Divide the batter into a greased springform (ca. 22 cm in diameter) and bake the cake in the middle of the oven.

Cream cheese-glaze: Inserts flødeosten into small pieces and stir it well with water, icing, lemon zest and juice. Butter "icing" on the cold carrot cake and garnish with Walnut kernels and grated lemon peel.

Tips:
Tip: Carrots may be substituted by 300 g groftrevet squash.
