Olive oil for brushing
¼cupZatar to sprinkle over
1tspSugar
1 ½cup1 cup of lukewarm water, approximately 2 ½ dl
1-3tbspOlive or other oil (may be omitted)
2tspSalt
560gCoarse wheat flour
7gDried yeast

Instructions for Zatar bread (Manaeesh)

To prepare the Zatar bread (Manaeesh) recipe, please follow these instructions:

Dissolve yeast in ¼ cup of water. Stir the sugar and leave it to stand and rest until the yeast is melted (5-10 minutes) (my advice: stir strongly) Add the rest of the water, salt, oil (if you want) and half of the flour Add the rest of the flour Until the dough collects.

Spread the dough on a matted surface until it is soft and elastic (about 10-15 min). Put the dough in a greased bowl and turn the dough so the grease covers the entire surface. Cover loose with a plastic cap or dish (my advice: a heated dish will make sure the dough does not dry out) for about 2 hours until the dough is twice as high.

Beat the dough, knead for a while, cover and leave for 15 minutes. Divide the dough into 3 or 4 equal bowls. Roll each bowl into a "pancake cake" about 20 cm. In diameter. Spread wheat or corn flour on a non-greased baking sheet and put the "pancakes" on it. Cover and let them rest to the heels (about 30 min.)

Preheat the oven to 220 degrees.

Brush the loaves with a little oil and sprinkle with zatar. Bake them until they are light brown (10 to 15 min). Served warm or room temperature.

Za'atar is a Middle Eastern blend of spices, which you may find at the local Turkish grocery store.
