Knead the flesh, supple with potato flour, a little water, salt and pepper. Wide it then out on a cutting board, which is washed with water. Share forcemeat into square pieces and put cheese and chives. Roll the pieces together and fry them in the fat. Boil the pan with a little water. Serve with boiled potatoes.
