Salt
1 Egg yolk (for brushing)
3 Egg yolks
50 g Butter (soft)
800 g Great "old" potatoes (baking potatoes)

Instructions for Pomme duchesse

To prepare the Pomme duchesse recipe, please follow these instructions:

Peel the potatoes and cut into smaller pieces. Boil them tenderly, approx. 20 min., Drain the water and steam them dry. Mash the potatoes through a sieve and stir with egg yolks and butter.
